AspectThey need a sunny, sheltered site.
CareAvoid heavy or wet soils, where it is less likely to survive the winter. Water until well established. Mulch with hay or compost, covering the crown to protect it from frost (crow should be uncovered in spring before the growth starts). Artichokes will last for 3-4 years. They will produce several large heads between July and September. Removing the side buds will increase the size of the main head. They should be eaten fresh, and harvested when they are plump but still tender, with tight scales. They take up quite a lot of space so are probably better suited to bigger gardens, as their yield is also relatively small.

DescriptionGlobe artichokes grow quite tall but their unusual thistle-like leaf and striking purple flowers make it a great addition to any bed/border as well as a tasty crop. Please note, if you allow the flower bud (the part that you eat) to open, then it becomes inedible, so you have to choose between crop or flowers.
